HACCP: The Food Safety Guardian from Space

Hello, everyone! Today, I want to share an interesting story behind the ‘HACCP’ mark that we often encounter every time we shop at the grocery store. Did you know that this mark actually started far away in space? Like a movie plot, let’s follow the journey of how HACCP, born to protect the safety of astronauts, became a reliable guardian of our dining tables.

1. A Promise Born from Dreams of the Stars: HACCP

In the 1960s, during the height of the space race between the United States and the Soviet Union, NASA was pushing forward with the ‘Apollo program’ to send humans to the moon. However, scientists faced a significant dilemma: ‘What should astronauts eat?’

In the unique environment of a spacecraft, even a tiny foodborne pathogen could lead to catastrophic results. If an astronaut were to suffer from food poisoning, the mission would inevitably fail. Therefore, NASA, in collaboration with Pillsbury, initiated a special project to create ‘100% safe food.’

Simply inspecting finished products was not enough. They completely flipped their thinking: “What if we could identify potential problems in advance and prevent them from occurring in the first place?” This was the birth of HACCP, or ‘Hazard Analysis and Critical Control Point.’ It was an innovative system that predicted all potential hazards from raw materials to manufacturing, processing, cooking, and distribution, focusing on managing them intensively.

2. The Seed of Safety Spreading to the Private Sector

Initially treated like a military secret, HACCP was first revealed to the world at a food protection conference in 1971. Shortly after, the U.S. Food and Drug Administration (FDA) adopted this method for the hygiene management of low-acid canned foods, allowing HACCP to extend beyond space.

A pivotal event that led to the global spread of HACCP occurred in 1993 when the Codex Alimentarius Commission adopted HACCP as the ‘global standard for food hygiene management.’ From this point on, HACCP was adapted and developed according to the circumstances of each country, establishing itself as a ‘global standard’ that food companies worldwide eagerly adopted. It became a natural promise for producing safe food, no longer just a special technology.

3. Efforts to Protect the Dining Table in South Korea

When did HACCP arrive in our country? Its history began in 1995 when HACCP regulations were first specified in the ‘Food Sanitation Act.’ In 1996, the Korean-style HACCP system was officially introduced.

However, it wasn’t a smooth journey from the start. In 2004, the ‘bad dumpling incident’ that shook the nation had a significant impact, raising public awareness about food safety more than ever. In response to this incident, the government gradually expanded the mandatory application of HACCP to various food items. Starting with products commonly found on our dining tables, such as fish cakes, frozen seafood, and kimchi, many food companies are now required to obtain HACCP certification based on their sales and number of employees.

Thanks to these efforts, now when we see the HACCP mark, we can feel reassured, thinking, “Ah, I can trust this!”

4. A Smart Promise for the Future: Smart HACCP

HACCP continues to evolve. Especially in the era of the Fourth Industrial Revolution, ‘Smart HACCP,’ which integrates Internet of Things (IoT) technology, is opening up a new future.

In the past, important information such as temperature, time, and hygiene conditions had to be recorded and managed manually. Now, various sensors and machines automatically record and manage this information in real-time. If a problem arises somewhere, the system immediately alerts us, allowing for much quicker and more accurate responses. This reduces human error and enables data-driven scientific management.

Thus, HACCP has grown from its origins in the extreme environment of space to become a strong partner that further secures the safety of our dining tables through advanced technology. Next time you see the HACCP mark at the grocery store, why not take a moment to reflect on the countless efforts and history behind it?
